3 1/2 cups of all-purpose flour, divided

1 teaspoon sugar

1teaspoon salt

1envelope (2.5 ounce) quick-rising yeast

1cup water

3tablespoons olive oil, divided

1 large egg

1/2 cup chopped kalamata olives

2teaspoons minced garlic (3-4 cloves)

1/4 cup grated paresan cheese

Makes 2 loaves!

1.Grease a baking sheet. Combine 1 cup of flour,sugar,salt and yeast  in a large bowl; mix well. heat water and 2 tablespoons olive oil in small saucepan over medium heat untill warm, 120 F-130 F. Add water mixture and egg to flour mixture; stir until mixed well. Stir in enough remaining flour until a soft dough forms and pulls away from sides of bowl.

2.Place dough on lightly floured surface. Knead any remaining flour, olives and garlic into dough until ingredients are well distributed and the and the dough is smooth and elastic,4-5 miniutes.Dividde dough in half. Shape each half into an 8-inch round. Place on prepared baking sheet. Cover dough loosely. Let rise in warm place until almost double size about 30 minutes.

3.Preheat oven to 400 F.Brush dough with remaining oil and sprinkle with parmesan. Bake breads until gloden, 20-25 minutes. Serve Warm.
